I recently took over not just the cooking of dinner each evening, but also the menu selection. This made me look for new recipes to add variety to our evening meals.
I am not a big seafood fan, but after seeing this recipe in Jamie Oliver’s 5 Ingredients series, I saw that it was something that I might like. It turned out quite well and was enjoyed by all three of us. After this, I sought out the book in my local library, read it on my Kindle, and added several more recipes to my “To Make” list.
Note: I used frozen cod filets in my version as it is what I had on hand.
