A quick scene from the kitchen tonight. First time I have made chicken marsala in a long time, but it came out really well. I had been looking for some decent marsala and finally found some at our nearby Italian market.
Definitely something I will add into the rotation now. I’ll do a complete walkthrough/Snapguide next time I make it, for sure.
Normally you would cook the mushrooms directly with the chicken and sauce, but since only my wife likes them, we made them separately (with some butter and marsala wine) and then she was able to add them to her dish.
To finish we drained the cooked pasta and added it to the chicken and sauce for some final cooking. That flavors everything and allows it suck up some of that great sauce.
