I came across this post in my feeds the other day and immediately headed over to sign up for the Macheesmo mailing list. This eCookbook (PDF format) contains some excellent recipes to add to my collection.

As the school year begins for my college professor wide and high-school-aged son, it falls to me to have healthily and tasty meals on the table when they get home. My Favorite Weeknight Meals has already given me several ideas to add to my repertoire. Check it out!

We host a large cookie party each Christmas, so I am always looking for new ideas to try. I have my regulars that I make every year, but I try to add one or two each season. I think we are approaching, or perhaps just passed, our 20th year with this party, so you can imagine how many cookies I have gone through in that time.

These S’more bars caught my eye as a way to bring the campfire taste into the party in a simple way. It seems that baking these would make it really easy and then allow me to carve them into small, taster-sized bars, as I do with most of the cookies at the party. You want everything small so that people can try a lot of different varieties instead of just one or two large cookies,

Food: Carrot Cake Cookies

I think I may have just found the cookie that will insure my continued material happiness for the foreseeable future. (LAUGH)

My wife is a HUGE fan of carrot cake and will eat it whenever she has the opportunity. For myself, though, I a skeptical of any dessert made from a vegetable. These cookies sound like something that just might change my opinion, though. I plan on making these as soon as the heat abates a bit. Even if they don’t turn out to be my favorite, I will keep the recipe around to rescue me on those days when I am a less than ideal husband. Goodness knows, we can all use a little help at those times.

This caught my eye immediately, as I would eat everything in it and it also looks great in the picture.

As the school starts again for both my high school age son and college professor wife, the task of cooking dinner falls on me more often. Recipes like this are always great to have in my back pocket for those evenings when I need something simple and quick, but also good. Chicken breast is a great staple to have in the pantry, but it can get a bit boring without some creative presentation. Recipes like this, that dress things up, allow me to rotate meals around with some small variations that can help me from getting bored.
